An Apple a Day
You’ve probably heard the expression, “An apple a day keeps the doctor away.”
I recently read that the phrase was first coined in 1913, based on a Pembrokeshire proverb that originated in 1866. Pembrokeshire is a county in the south-west of Wales.
I have not always eaten an apple a day–until recently when I discovered Rockit apples at my local grocery market. They are the perfect size–dainty and delicious–so I’ve been eating them regularly. I don’t know if one a day will keep the doctor away but regardless of the outcome I’m going to keep them in my daily diet. They’re also a lovely snack to take with me when I’m on the run. In some research sources the apple has been dubbed ‘nature’s perfect snack.’ I agree. I now take one with me when I’m on the run.
Thinking about apples jogs my memory of my mother’s beautiful and tasty apple desserts:

There used to be a restaurant in San Diego that made a delicious puffed apple pancake. Even though they are now closed, I can still remember having to wait for 20 minutes to get it! Boy, was it yummy and definitely worth the wait!
PS I also pack a sliced apple when I’m on the run. I’ve found it to be a great snack!

Hi Karen. Your writing about apples reminds me of when my good friend Ellen’s grandmother made the most delicious, buttery and flaky apple strudel. What a joyous time that was. Apples are a great snack and they are so much healthier than the sugar snacks that are always advertised. It’s fun to read your writing because it brings back many happy memories.

My mother made that snack for me too.
My Mother made delicious fried apples. My daughter makes delicious Chicken Salad and puts small pieces of apples in it, The chicken salad is her own recepie and makes my lunch sandwiches ~yummy! She uses cans of small moist pieces of chicken to make the salad and of course you can put the Salad on lettuce.
